7 Layer Bars

2011 rings in new beginnings, exciting adventures and (in this blogs case) more creative and tasty recipes. It is my pleasure to provide a decadent and rich cookie of sorts for the first entry of the year – 7 Layer Bars. White chocolate, semi-sweet chocolate, butterscotch, walnuts and coconut are just the start of the layers. Combined, be prepared for your taste buds to be overwhelmed. Caution you’ll want to eat more than one. Goes well with a cup of black coffee. May this “rich” treat bring you prosperity for this new year. Enjoy and Happy New Year!


6-7 planks of cinnamon graham crackers
1/2 cup of melted butter (1 stick)
1 12 oz can of sweetened condensed milk
1 cup white chocolate chips
1 cup semi-sweet chocolate chips
1 cup of butterscotch chips
2 cups of coconut flakes
1 cup chopped walnuts (or pecans)
wax paper
13 x 9 inch baking pan
non-stick cooking spray

Food processor
*recipe will assume you have a food processor, if not, use appropriate method to crush graham crackers.


Preheat oven to 350 degrees. Lightly grease pan with non-stick cooking spray, making sure to coat bottom and sides. Line inside of pan with wax paper. Wax paper should only cover the bottom. In food processor crush graham crackers until completely pulverized. Slowly pour in melted butter combine until a cookie-like batter is formed. Add mixture to 9 x 13 pan and spread making sure it evenly coats the bottom of pan. Press firmly. Add sweetened condensed milk evenly over the cookie layer. Begin layers as such: white chocolate chips, coconut, butterscotch chips, coconut, semi-sweet chocolate, coconut, sweetened condensed milk, walnuts, coconut and finally….yes, more sweetened condensed milk.

Side note: If you’ve noticed, there are more than 7 layers. This is simply because we got a bit over zealous.

Once all ingredients have been used to create layers, place in oven and bake for 30 minutes or until bars are golden brown. Place bars on a rack and run a knife along the edges to separate bars from the pan. Allow to cool on a rack completely. Once bars have cooled completely cut into squares.

Caution: As much as you want to dive in and cut right away, don’t. The bars have to set and become solid so that the cuts will be clean and perfect. Eat and Share!
